Brown Butter Ahara Ghee
This paleo-style clarified brown butter is intentionally roasted ghee in the South-Indian style, made by slow-cooking it over an open flame to develop the notes of ‘nuts’ and ‘caramel’. Add crisp sage leaves or any herb in it and drizzle over congee, veggies, or pasta, spread on baked goods and put it in coffee.
